African Lamb Stew with Peanuts
A rustic West African lamb stew with carrots, peas, spices and peanuts.

Ingredients

Lamb Stew
3
medium onions slivered
1/8
teaspoon
garlic chopped
1
cup
chicken broth
2
medium carrots sliced
¼
teaspoon
pepper
½
teaspoon
Cayenne
½
teaspoon
crushed red pepper
½
cup
fresh or frozen corn
½
cup
fresh or frozen peas

Tablespoon
peanut butter
Garnish with dry roasted peanuts
Salt to taste
Instructions
Sauté onions with garlic with ½ teaspoon butter.
Remove onions from pan.
Brown lamb cubes over medium-high heat.
Stir in broth, onions, carrots, pepper, cayenne, crushed red peppers.
Bring to a boil. Reduce heat. Cover and simmer on low for 1 hour or until meat is tender.
Mix in peanut butter.
Add peas and corn. Simmer 5 more minutes.
Garnish with chopped peanuts.
Notes
Either lamb or goat stew meat can be used for this dish.
